Beet microgreens

It has that classic "fresh soil" taste, but it is much more subtle and less heavy than the actual vegetable.

This is balanced by a mild sweetness that tastes very similar to baby spinach. Unlike the mature leaves, which can sometimes be a bit salty or bitter, the microgreens are very delicate and juicy. They have a cool, clean finish that makes them great for brightening up a dish without overpowering it.
